Title: Nectarine Salad

Yield: 4 Servings
1 | lb | Nectarines, pitted & cubed |
1/2 | c | Sweet Red Pepper, chopped |
1/4 | c | Green Onions, thinly sliced |
1/4 | c | Vegetable Oil(or LESS) |
2 | tb | Lime Juice |
1 | tb | Cider Vinegar |
1/4 | ts | Salt |
1/8 | ts | Black Pepper, ground |
Leaf Lettuce |
Combine nectarines, red pepper and onions in a small bowl. Whisk together oil, lime juice, wine vinegar, salt and pepper. Pour over nectarine mixture. Refrigerate. Mound on lettuce to serve.
