Title: Deviled Cornish Hens

2 Cornish hens, skin removed
2tbWater
1/4cSoy sauce
1/2cRed wine
1tbSherry extract
1tbDijon mustard
1/2tsHot pepper sauce
2tbVegetable oil
1/2tsPepper
3tbDry bread crumbs

Split hens in half down the back. Place in a shallow pan. Combine remaining ingredients, except bread crumbs and pour over hens. Marinate several hours, turning occasionally. Preheat oven to 350. Sprinkle half of the bread crumbs over hens. Bake 30 minutes. Turn hens, sprinkle with remaining crumbs. Bake 30 minutes more.

Per serving: 26g protein, 14g fat, 7g carb., 1546mg sodium, 76mg chol., 275 calories.
