Title: Apple Pudding

3mdCooking apples;peeled sliced
  Vegetable cooking spray;
1cAll-purpose flour;
1tsBaking powder;
1/4tsSalt;
1/2cReduced-cal margarine;
  Sugar substitute to equal 1/3 cup sugar
1/2tsVanilla extract;
1 Egg;
1/2cSkim milk;

Arrange apple slices in button of an 8" square baking pan coated with cooking spray. Set aside. Combine flour, baking powder, and salt, stirring until blended. Set aside. Combine margarine, sugar substitute, rind, and vanilla in a medium bowl; beat at medium speed of an electric mixer until well blended. Add egg; beat until fluffy. Add flour mixture to creamed mixture alternately with milk, beginning and ending with flour mixture. Spoon batter into prepared pan, and bake at 375 degrees for 40 to 50 minutes or until a wooden pick inserted in center comes out clean. Cut into 6 squares, and serve hot.
