Title: Monterey Penne

1 | Red or green pepper, cut in julienne strips (or Both) | |
1 | c | Quartered, fresh mushrooms |
1 | Onion, coarsely chopped | |
4 | c | Hot cooked penne pasta, drained |
1 | c | Monterey jack cheese, shredded |
Place veggies and 2 tbsp water in a covered microwaveable dish. Cook on high for 4-5 minutes. Drain veggies and toss with pasta and cheese. Makes 2 servings.
