2 | Thin slices Eggplant (50gm) | |
2 | ts | Butter (10gm) |
1/4 | c | Canned tomatoes (50 gm) |
1/2 | ts | Chives, chopped (2gm) |
Salt and pepper to taste |
Brown the eggplant in butter. Add salt and pepper. Heat tomatoes in a separate pan and pour over eggplant. Sprinkle with chopped chives.
