2 | c | Chick peas, drained -- |
Canned | ||
2 | Cloves garlic -- mashed | |
2/3 | c | Tahina paste (ground sesame |
Seeds) | ||
1 | ts | Salt |
1/4 | c | Lemon juice |
1/4 | ts | Cumin |
Parsley -- for garnish |
Place all the ingredients except parsley in a food mill or blender. Mix until the chickpeas are smooth. Store the hummus in acovered container in the refrigerator. Serve well chilled, and just before serving sprinkle top with chopped parsley. Can leave a few chickpeas unmashed to sprinkle on top for garnish. More garlic may be added, if desired. Also if a thinner consistency is required for serving as a dip with light chips (like potato chips) may add more lemon juice. Serve with pita, crackers or thick slices of French or Italian bread.
