Title: Cashmere Chutney

1kgGreen Gooseberries or apples, (2 lb)
1/2tsCayenne Pepper
125 G, ¥
1 Whole ginger, chopped and pounded
1kgBrown Sugar, (2 lbs.)
500gRaisins, (1 lb.)
50gSalt, (2 ozs.)
500gDates, (1 lb.)
  Vinegar
1 Clove Garlic

Put apples chopped but not peeled and cored in preserving pan. Cover with vinegar. Cook until soft then add remainder of ingredients. Boil half an hour. Put into bottles, cover, and keep twelve months before using. Recipe by: Edmonds Cookery Book, New Zealand
