Title: Elegant Fruit Chutney

1 1/2 | c | Brown sugar, packed |
1 | c | Cider vinegar |
4 | lg | Cloves garlic, chopped |
2 | ts | Minced gingerroot |
1 1/2 | ts | Salt |
1 | ts | Cinnamon |
1 | ts | Chile powder |
1/2 | ts | Cloves |
1/2 | ts | Coriander |
1/2 | ts | Black pepper |
1/4 | ts | Crushed red chile pepper |
1 | lb | Tart apples, peeled and diced |
1/2 | lb | Pitted prunes, chopped coarsely |
1/2 | lb | Dried apricots or peaches, chopped coarsely |
Mix all ingredients in a large heavy saycepan. Bring to a boil and simmer,
uncovered, stirring often, until fruit are very tender, 40-40 minuntes.
Ladel into hot, sterilized half-pint jars and seal. Process in a boiling
water bath for 15 minutes. Cool and store in refrigerator after opening.
Makes about 8 jars. NOTES
: This chutney is sweet-tart and is especially good with simple broiled or
raosted meats
