Title: Tomato Macadamia Nut Chutney

3cChopped peeled Italian plum tomatoes
1 1/2cSugar
1cRed wine vinegar
1/4cSherry vinegar
2tbMinced fresh basil
6 Cloves garlic, minced
2tsSalt
  Pimch of dried red pepper flakes
1cMacadamia nuts
1/2cDried currants

Bring first 8 ingredients to boil in heavy large nonaluminnum saucepan. Reduce heat and simmer briskly until thickened and reduced to 3 cups, stirring occasionally, about 2 hours. Stir in nuts and currants and simmer 5 minutes. Serve hot or cold.
