Title: Quick Draw Gazpacho

Yield: 8 Servings
4 | c | Tomato juice |
4 | c | Beef consomme' |
1/2 | ts | Tabasco sauce |
3 | tb | Olive oil |
1/2 | ts | Salt |
1/2 | c | Fresh lemon juice |
4 | lg | Cloves garlic |
4 | Ice cubes | |
4 | Tomatoes, chopped | |
2 | Cucumbers, chopped | |
2 | Green peppers, seeded and | |
Chopped | ||
10 | Green onions, chopped | |
1/2 | c | Minced parsley |
Put first eight ingredients in blender or food processor, and blend for 1 minute. Or, mince garlic, omit ice cubes and add 1/2 c water and mix ingredients by hand. Chill until serving time. Serve chopped vegetables in individual bowls for guests to add as they wish.
