Title: Greek Style Rice with Spinach

Yield: 4 Servings
1 1/2 | tb | Olive oil |
1 | lg | Onion;chopped |
2 | cl | Garlic;minced |
4 | c | Chopped, fresh spinach |
3 | tb | Lemon juice |
4 | c | Cooked, long grain rice |
2 | tb | Minced, fresh basil |
Salt and pepper to taste | ||
1/4 | c | Feta cheese |
In a large skillet, heat oil. Add onions and garlic and cook on medium-high heat till onion is softened. Add spinach, lemon juice and rice. Cook, stirring frequently, until spinach is limp and rice is thoroughly heated. Toss in basil and season with salt and pepper.
