Title: Giant Beans Appetizer (Gigantes Plaki)

Yield: 6 Servings
10 | oz | Dry fava, large elephant or lima beans |
1 1/2 | c | Good oilive oil |
1 | md | To 1 1/2 md onions, chopped |
1 | Clove garlic, thinly sliced | |
1 | md | Carrot, diced |
1 | Stalk celery, diced | |
1 | md | Potato, peeled and chopped |
1 | c | Water |
1 1/2 | ts | Salt |
1 1/2 | ts | Sugar |
Soak beans overnight in water to cover. Drain. Place beans in a saucepan with water to cover over medium-high heat. When water starts to boil, reduce heat to low and simmer 45 minutes. Drain and set aside.
Heat olive oil in a saucepan. Add onion and garlic and saute' for 2 minutes. Add carrot and saute' for 2 minutes. Add celery and potato and saute' for 2 minutes.
Add the beans, tomatoes, 1 C. water, salt and sugar and cook over low heat for 1 hour or until beans are tender, stirring occasionally. Cool and serve at room temperature. Yields 12 servings.
