1 1/2 | c | Long Grain Rice |
3 1/2 | c | Chicken Broth |
1 | md | Onion; chopped |
3 | md | Red Apples |
1/2 | c | Pine Nuts |
1/2 | c | Santa Rosa Wine |
4 | tb | Butter; melted |
1/2 | c | Apple Juice |
| | Salt and Pepper to taste |
Bring 3 c. of the chicken broth to a boil. Add chopped onion and rice.
Cover and simmer 25 min. Combine remaining chicken broth, wine, butter,
and apple juice. Arrange hens in a baking pan, and brush w/ this mixture.
Salt and pepper the birds, and place a sm. wedge of apple in the cavity of
each one. Bake at 375 for 1 hr., basting every 15 min. Chop remaining
apples into 1/2" sections w/ some skin on each. Saute apples 5 min. w/ pine
nuts. Place ruce on a platter, top w/ apple-nut mixture. Arrange hens on
top. Strain pan drippings and serve in gravy boat...
