DRESSING: | ||
1/2 | c | Olive oil |
1/2 | c | Wine vinegar |
1 | tb | Lemon juice |
1 | ts | Salt |
1 | ts | Oregano |
SALAD: | ||
1 | lg | Head assorted greens |
2 | Tomatoes, cut in wedges | |
1 | Cucumber, sliced | |
3 | Scallions, thinly sliced | |
5 | Radishes, thinly sliced | |
1/2 | c | Calamata olives |
1/2 | c | Feta, crumbled |
8 | Fillet of anchovies |
DRESSING: Place all ingredients into container. Cover, shake well and set aside.
ASSEMBLY: Wash greens, dry and tear into bite-sized pieces. Place all ingredients in a large bowl except for anchovies. Ad the dressing. Garnish with anchovies.
