1 | ts | Salt & pepper; to taste |
2/3 | tb | Dried oregano leaves |
1 | Broiler chicken; cut in half | |
3 | tb | Butter |
2 | tb | Olive oil |
16 | oz | Can of tomatoes |
Combine lemon juice, salt and oregano. Rub chicken inside out with the mixture. Allow to stand at room temperature 1 hour. Place skin side down in a baking pan. Dot with butter. Bake in a hot oven (400~) for 1/2 hour. Turn chicken skin side up and drizzle with olive oil and pepper to taste. Cover with tomatoes. Return to oven and bake for another 1/2 hour basting occasionally, or until the chicken is tender.
