Title: Greek Okra Stew

1 | Onion; peeled and chopped | |
2 | ts | Oil |
1 | lb | Okra; chopped |
1 | pk | Seitan (8oz); drained and cubed |
2 | Tomatoes; chopped | |
2 | tb | Wine vinegar |
2 | tb | Lemon juice |
1/2 | ts | Garlic powder |
1/2 | ts | Coriander |
Salt and pepper to taste |
Stir-fry onion with oil in a large frying pan over medium heat for 3 minutes. Add okra and remaining ingredients. Stir-fry 10 minutes longer. Serve over hot cooked brown rice.
