1/4 | c | Finely shredded cucumber; peeled |
1 | Clove garlic; minced | |
2 | ts | Olive oil |
1/4 | ts | Salt |
1/4 | ts | Pepper |
Chopped fresh mint; optional |
Combine all ingredients in a medium bowl; stir well. Cover and chill thoroughly. Yields: 1 1/4 cups.
