Title: Cinnamon-Scented Apple Noodle Kugel

Yield: 12 Servings

16ozMedium egg noodles
6tbButter; or margarine, divided
3 Golden Delicious apples; total 1 1/2#) peeled, cored & slice
6tbSugar; divided
1tsCinnamon; divided
1/2cPecans; almonds or walnuts, coarsely chopped
1/3cDark raisins
1tsGrated lemon peel
 ds-salt
4 Eggs; separated
1tsVanilla

Cook noodles in large pan of boiling salted water till barely tender, about 5 minutes. Drain. Rinse with cold water & drain well. Transfer to large bowl. Heat 2 T butter in large skillet. Add 1/2 the apples and saute over medium heat 5 minutes, turning once. Remove with slotted spoon. Add rest of apples to skillet & saute them. Return all apples to skillet. Sprinkle with 2 T sugar & 1/2 t cinnamon. Saute 1 minute, tossing apples. Transfer to separate bowl. Melt remaining 4 T butter in skillet over low heat. Add 3 T melted butter to noodles & mix well. Stir in nuts, raisins, lemon peel & salt. Whip egg whites to soft peaks. Stir in 1/4 of the whites. Fold in remaining whites. Add half of noodle mix to greased 13 x 9 x 2 baking dish. Top with sauteed apples in even layer. Top with remaining noodle mix. Spread gently to cover apples. Sprinkle with remaining 1 T melted butter. Cover & bake 30 minutes @ 350. Uncover & bake till set, about 20 minutes more. Serve hot. Serves 8.
