Title: West Indian Marinade
Categories: Marinade
Yield: 2 1/2 cups

1 White Onion, Finely Chopped
1 Green Pepper, Seeded and -Finely Chopped
1 Scotch Bonnet Pepper, Seeded -and Finely Chopped
2 Cloves Garlic, Minced
1tsSalt
1tsFreshly Ground Black Pepper
1/2cChicken Stock
1/2cWhite Wine Vinegar
  Juice of One Lime
1tsSweet Paprika
1tsDried Oregano
2 Sprigs Fresh Coriander, -Finely Chopped
2 Sprigs Fresh Parsley, Finely -Chopped

In a large bowl, combine all the ingredients to form a paste. Cover and refrigerate.
