Title: Cheddar Pepper Muffins **

2cFlour
1tbSugar
1tbBaking powder
1tsBlack pepper; coarsely cracked
1/2tsSalt
1 1/4cMilk
1/4cVegetable oil
1 Egg
1cCheddar cheese; shredded

Preheat oven to 400~. Generously grease 12 muffin cups. In large bowl, combine dry ingredients. In small bowl, combine milk, oil and egg until blended. Stir into flour mix just until blended. Fold in 3/4 cup of the cheese. Spoon into muffin cups. Sprinkle with remaining cheese. Bake for 15-20 minutes or until light golden brown. Let cool in pan on wire rack for 5 minutes. Remove from pan and serve warm. When eaten warm, the cheese inside the muffins is stringy.
