2 | c | Flour |
3/4 | c | Grated parmesan cheese |
2 | ts | Sugar |
2 | ts | Baking powder |
2 | ts | Italian herbs seasoning |
1/2 | ts | Baking soda |
1/2 | ts | Salt |
1/2 | c | Basil and parsley mixed; chopped |
1 1/4 | c | Buttermilk |
1/4 | c | Olive -OR vegetable oil |
1 | | Egg |
Preheat oven to 400~. Grease 36 miniature muffin cups (or 12 large). In
large bowl, combine flour, cheese, baking powder, Italian seasoning, baking
soda, salt and basil-parsely mix. In small bowl, combine buttermilk, oil
and eggs until blended. Stir into flour mix just until moistened. Spoon
into muffin cups. Bake for 12-15 minutes for mini cups (15-20 minutes for
large), or until tested done. Remove from pans. Serve warm.
