1 1/4 | c | Oat bran; |
1 | c | Whole-wheat pastry flour; |
1/4 | c | Brown sugar; |
1/2 | c | Raisins; |
2 | ts | Baking powder; |
1/4 | ts | Salt; |
1 | c | Low-fat milk; |
| | Egg; beaten |
1/4 | c | Molasses; |
2 | tb | Vegetable oil; |
| x | Nonstick veg cooking spray; optional |

Preh | eat | oven to 425F. |
Combine dry ingredients in large bowl. In separate bowl, mix milk, egg,
molasses, and oil. Add liquid ingredients to dry, and mix only until dry
are moistened (the mixture should be lumpy). Spray muffin tin with cooking
spray or line with baking cups. Fill each cup 3/4 full. Bake at 425F for
15 minutes, or until tops are golden brown. Makes 12 muffins. Per Muffin:
