1 3/4	c	Bisquick baking mix
1/2	c	Milk
1	ts	Grated lemon or orange peel
1		Egg
1/3	c	Sugar
3	tb	Butter or margarine
1/2	c	Cream-style cottage cheese

In mixing bowl, cream together sugar and margarine. Beat in cottage cheese and lemon (or orange) peel. Add eggs and beat well. Stir in baking mix and milk until moistened. Spoon into greased muffin pan. Bake at 400 degrees for 20 minutes. Optional: Nuts may be added.
