Title: Gruyere Cheese Muffins

1 2/3 | c | All purpose flour, |
1/3 | c | Rye flour |
2 | ts | Bkg powder, |
1 | pn | Salt |
| | Cayenne |
1/2 | c | Gruyere ; finely shredded |
1 | c | Milk |
1/2 | | Sweet butter; melted |
1 | | Egg; beaten |
2 | ts | Dijon mustard |
1 | ts | Honey |
Preheat oven to 400 degrees. Stir flour, bkg powder, salt & pepper
together, add cheese & toss to coat the strands. Put milk, butter, egg,
mustard & honey in another bowl and whisk very well. Add the milk to the
flour & cheese &----> mix just to combine-DON'T OVERMIX! Put paper cupcake
liners into 8 or 10 muffin tins and fill with mixture. For a smaller
muffin, fill more tins. Bake 20 to 25 minutes or until a wooden pick,
inserted in the center of a muffin comes out clean. These are wonderful for
lunch w/smoked turkey or baked ham & honey/mustard dressing. Make good mini
muffins too. For minis-bake about 15-20 min----->
