1/2 | c | Cheese;cheddar shredded (2 |
1/4 | c | Sugar |
2 | ts | Baking powder |
1/4 | ts | Salt |
1 | | Egg; beaten |
3/4 | c | Milk |
1/3 | c | Cooking oil |
Grease twelve muffin cups, or spray with non-stick spray coating. (or line
muffin cups with paper baking cups) Set pan aside. In bowl stir together
flour, cheese, sugar, baking powder, salt and cayenne.
Make a well in center. In small bowl combine egg, milk and oil. Add egg
mixture all at once to flour mixture. Stir until just moistened. (batter
should be lumpy) Gently fold in bacon. Fill prepared cups 2/3 thirds full.
Bake in pre-heated 400-deg oven. 20 to 25 minutes or until golden.
remove muffins from pan and serve warm. My crew loves these for breakfast
the next AM, if there are ever any left over.
