1 1/2 | c | All purpose flour; sifted |
1 | ts | Baking powder |
1 | ts | Baking soda |
1/2 | ts | Salt |
3/4 | c | Quick-cooking rolled oats |
1 | c | Apples, finely chopped |
2/3 | c | Sharp cheddar cheese; coarsely grated |
1/2 | c | Chopped pecans (optional) |
3/4 | c | Milk |
15 | | Red apple; thin slices, unpeeled |
| | Butter or margarine; melted |
| | Cinnamon-sugar |
Cram shortening and sugar. Add eggs, one at a time,beating well after each
addition. Mix and sift flour, baking powder, baking soda, and salt; stir
into shortening mixture. Stir in oats, apples, cheese and pecan; mix well.
Add milk gradually, stirring only to moisten other ingredients. Fill well
greased muffin tins 2/3rds full. Dip apple slices first in melted butter,
then in cinnamon-sugar. Press 1 slice into batter in each muffin cup.
Sprinkle lightly with cinnamon-sugar. Bake at 400F for 25 minutes. Makes 12
