3/4 | c | Chopped Dried Apples |
1/4 | c | Unsweetened Apple Juice* |
1 1/2 | c | Flour |
1/2 | c | Granulated Sweetener |
1/4 | c | Oat Bran |
1/4 | c | Crushed Bran Flakes |
2 | ts | Baking Powder |
1 | ts | Cinnamon |
1/8 | ts | Salt |
1/2 | c | Unsweetened Applesauce |
1/4 | c | Skim Milk |
1/4 | c | Vegetable Oil |
1 | | Egg, or Egg Substitute |

Soak dried apples in apple juice concentrate in a small bowl for 20
minutes. Preheat oven to 400`F.
Combine flour, granulated sfweetener, oat bran, crushed bran flakes,
baking powder, cinnamon and salt in a large mixing bowl. In another bowl,
combine dried apple mixture, applesauce, milk, oil and egg; mix well. Stir
into dry ingredients just until dry ingredients are moistened; do not
overmix. Spray 12 muffin cups with no-stick cooking spray. Fill muffin
cups 1/2 full. Bake muffins at 400`f for 18 to 20 minutes or until golden
brown. Serve warm. *Use thawed, (not reconstituted) frozen concentrate
