1/4 | c | Buttermilk |
1/4 | c | Flour |
1 | ts | Baking powder |
1/4 | ts | Salt |
2 | c | Sharp Cheddar cheese;grated |
2 | | Green onions; chopped |
10 | sl | Bacon; fried and crumbled |
Preheat oven to 400F. Place cottage cheese in a food processor fitted with
a steel blade and process until smooth. Transfer to a large bowl. Process
egg whites in food processor until foamy. Add next 5 ingredients and
process until smooth. Add egg mixtue to cottage cheese. Stir in cheese,
onins, and bacon. Fill greased large muffin tins 2/3 full and bake 12 to
15 minutes or until edges are light brown. Makes 10.
