Title: Root Beer Muffins

Yield: 12 Servings
1 1/2 | c | Flour |
1/4 | c | Sugar |
4 1/2 | ts | Baking powder |
3/4 | ts | Salt |
1/3 | c | Raisins |
2 | Eggs, slightly beaten | |
1/4 | c | Butter or margarine, melted |
12 | oz | Root beer soda |
1 1/2 | c | Quick cooking oatmeal |

Cinnamon sugar mixture |
In medium bowl, combine flour, sugar, baking powder and salt. Remove 2 tablespoons and mix it with the raisins in a separate bowl. Set aside. In separate bowl, combine eggs, butter, root beer and oatmeal. Mix root beer combination into flour. Fold in raisins. Fill greased or paper-lined muffin tins two thirds full. Sprinkle lightly with cinnamon sugar mixture. Bake in preheated oven at 400 degrees 20 to 25 minutes and serve warm.
