Title: Tommy's Orange Muffins

1 | lg | Orange |
1/3 | c | Orange juice |
6 | tb | Buter; at room temp, cut in- to chunks |
1 | lg | Egg |
1/2 | c | Seedless golden raisins |
1 | tb | Light rum |
1 1/2 | c | All purpose southern flour |
3/4 | c | Sugar |
1 | ts | Baking powder |
1 | ts | Baking soda |
1 | ts | Salt |
Butter and flour 12 muffin cups. Grate rind from orange; reserve. Remove and discard white pith from orange; cut peeled orange into quarters, removing seeds. Preheat oven to 400~. In blender, combine rind, orange quarters, orange juice, butter, egg, raisins, and rum; blend for 5 seconds. Transfer mixture to lg. nonreactive mixing bowl.
In another bowl, sift together dry ingredients. Add dry ingredients to orange mixture; stir just until blended (do not overstir). Spoon mixture into prepared muffin cups, filling each cup 2/3 full; bake until muffins are golden, 15 to 20 mins.
