1/3 | c | Cornmeal |
1/4 | c | Sugar |
2 | ts | Dry mustard |
2 | ts | Baking powder |
2/3 | ts | Salt |
1/2 | ts | Baking soda |
1/8 | ts | Cloves |
1 | c | Chopped cooked smoked ham |
2 | | Egg, room temp. |
1 | c | Buttermilk |
1/3 | c | Oil |
3 | tb | Dijon mustard |
Mix together the first 8 dry ingrdeints. stir in the ham. In another bowl
combine wet ingredients.Pour into well in center of dry ingredients and mix
quickly. Spoon into muffin cups 3/4 full. Bake in a 375 oven until done and
browned.12 to 14 muffins, main course type.esp. good at breakfast.Note:May
want to cut down on salt as ham and dijon themselves tend to be salty.
