Title: Maple Oatmeal Muffins

1/2 | c | Brown sugar |
1 1/4 | c | Buttermilk |
3/4 | c | Maple syrup |
1 1/4 | c | Whole wheat flour |
1 1/2 | c | Rolled oats, plus 3 TB for sprinkling |
1 | ts | Baking powder |
1 | ts | Baking soda |
1/2 | ts | Salt |
Preheat oven to 400~. Grease muffin tins or line with paper cups. Whisk together eggs and brown sugar until smooth. Add buttermilk and maple syrup. Whisk and set aside. In another bowl, combine wheat flour, 1 1/2 cups of oats, baking powder, baking soda, and salt. Mix with fork. Add to buttermilk mixture and stir until evenly moistened. Spoon into muffin cups, to the top. Sprinkle about a teaspoon rolled oats across the top and bake 20 minutes, until a tester comes out clean.
