Title: Healthful Chocolate Mini Muffins

1 | pk | Chocolate cake mix |
1 | c | Egg Beaters® 99% egg substitute |
1 3/4 | c | Skim milk |
3/4 | c | Oat bran |
1/2 | c | Wheat bran, (or 7-grain cereal) |
1/4 | c | Splenda |
2 | tb | Cornstarch, custard mix |
Preheat oven to 350. Blend all ingredients four minutes at medium-high speed, scraping bowl occasionally. Fill mini-muffin tins and bake 15 minutes or until center springs back. Recipe by: Katherine Lawson
