Title: Tropical Bran Bread

1 | c | Fiber one cereal, crushed |
1 | c | Canned pineapple juice |
1 | ts | Vanilla |
1 3/4 | c | Flour |
3/4 | c | Sugar |
1/3 | c | Butter |
2 | ts | Baking powder |
1/2 | ts | Salt |
1/2 | ts | Baking soda |
2 | Eggs |
Heat oven to 350°. Grease bottom only of loaf pan. Mix cereal, juice and vanilla in large bowl; let stand 10 minutes. Stir in remaining ingredients. Pour into pan. Bake 55-60 minutes or until toothpick comes our clean. Cool 10 minutes, loosen sides from pan. Remove from pan. Cool completely on rack before slicing. Store tightly wrapped in refrigerator up to 1 week. Variation: Stir in 1/2 cup raisin with the ingredients. Add 1/2 cup finely chopped walnuts.
