Title: Maple Apple Muffins

2 | Eggs, beaten | |
1/2 | c | Margarine - becel light, or butter |
1 | c | Maple syrup, 100% Pure |
1 1/2 | c | Apples, peeled, diced |
3 | c | Flour |
1 | tb | Baking powder |
1 | ts | Salt |
1 | ts | Cinnamon |
1 | ts | Nutmeg |
Preheat oven to 350. Cream eggs and margarine in a bowl until light and fluffy. Add Maple Syrup and apples. Mix well. Sift in dry ingredients. Stir until moistened. Put into greased muffin tins. Bake 20 to 25 minutes.
NOTES : Original recipe says it will make 12 medium muffins - I made 16.
The batter is very thick. The eggs and margarine really don't go "light and
