Title: Maple Apple Muffins

2 Eggs, beaten
1/2cMargarine - becel light, or butter
1cMaple syrup, 100% Pure
1 1/2cApples, peeled, diced
3cFlour
1tbBaking powder
1tsSalt
1tsCinnamon
1tsNutmeg

Preheat oven to 350. Cream eggs and margarine in a bowl until light and fluffy. Add Maple Syrup and apples. Mix well. Sift in dry ingredients. Stir until moistened. Put into greased muffin tins. Bake 20 to 25 minutes.

NOTES : Original recipe says it will make 12 medium muffins - I made 16. The batter is very thick. The eggs and margarine really don't go "light and fluffy". Recipe by: CAMP Maple Syrup (site on the web) By "LindaG" on Apr 27, 1997
