Title: Low Fat Caesar Dressing

Yield: 1 Servings
1/2 | c | Buttermilk |
1/2 | c | Nonfat plain yogurt |
1/4 | c | Parmesan cheese; freshly grated, about 3/4-oz. |
1/4 | c | Lemon juice; fresh |
2 | Shallots; chopped | |
3 | cl | Garlic; minced |
3 | Anchovy filets; drained, minced | |
2 | ts | Lemon peel; grated |
1 | ts | Fresh oregano; chopped |
ds | Worcestershire sauce; (generous dash) |
Combine all ingredients in blender and blend until creamy. Season to taste with salt and pepper. (Can be prepared 3 days ahead. Cover and refrigerate. Bring to room temp before using). Yield - 1.1/2 cups
