Title: Low Fat Caesar Dressing

Yield: 1 Servings

1/2cButtermilk
1/2cNonfat plain yogurt
1/4cParmesan cheese; freshly grated, about 3/4-oz.
1/4cLemon juice; fresh
2 Shallots; chopped
3clGarlic; minced
3 Anchovy filets; drained, minced
2tsLemon peel; grated
1tsFresh oregano; chopped
 dsWorcestershire sauce; (generous dash)

Combine all ingredients in blender and blend until creamy. Season to taste with salt and pepper. (Can be prepared 3 days ahead. Cover and refrigerate. Bring to room temp before using). Yield - 1.1/2 cups
