Title: Pasta Bake

1/4# hot Italian turkey sausage, casing removed 2 onions, diced 2 red peppers, diced 1/2# mushrooms, sliced 1# orecchiette pasta, cooked 1 C. non-fat ricotta cheese 1 jar (26 oz.) spaghetti sauce 1/4# skim-milk mozzarella cheese, diced
Preheat oven to 400^. Grease 3 quart shallow baking dish. Crumble sausange into large skillet; add onions, peppers and mushrooms. Saute over medium-high heat 12 minutes or until vegetables are tender.
Add pasta, ricotta and sauce; mix well. Place in prepared baking dish. Sprinkle with mozzarella. Bake 30 minutes or until hot and bubbly. Let sit 5 minutes before serving. Makes 8 servings, 393 calories per serving 9 g. fat.
