Title: Low Fat Lasagna

1 | lb | Lean ground beef |
3/4 | c | Chopped onion |
1 | Clove garlic peeled and crushed | |
1 | cn | (16 oz) tomatoes |
1 1/2 | c | Tomato paste |
2 | ts | Basil |
1 | ts | Oregano |
2 | ts | Salt |
8 | oz | Lasagne noodles |
3 | c | Low fat cottage cheese |
1 | tb | Parsley flakes |
2 | Eggs beaten | |
3/4 | lb | Shredded mozzarella |
1/2 | c | Grated parmesan. |
Brown beef with onion and garlic. Add tomatoes, tomato paste basil, oregano and salt. Simmer uncovered 30 minutes stirring occasionally.
Preheat oven to 350F.
Cook lasagne noodles according to package directions.
Mix together cottage cheese, parsley flakes, and eggs.
In a 9 X 13 inch baking pan, layer half the noodles, cottage cheese mixture, and meat sauce. Repeat layers with remaining ingredients. Sprinkle with parmesan cheese
Bake for 45 minutes. Let stand 10 minutes before cutting into 12 squares. (about 3 X 4 inch pieces)
