Title: Fresh Mushroom Salad

1/4cCanned no-salt-added chicken broth, undiluted
1tbMinced fresh parsley
1tbMinced fresh basil
3tbLemon juice
1tsOlive oil
1/2tsSalt
1/2tsGround cumin
1/4tsFreshly group pepper
1 Clove garlic, minced
1 1/2lbFresh mushrooms, quartered
  Fresh basil sprigs (opt)

Combine first 9 ingredients in a large bowl. Add mushrooms; toss gently. Cover and chill at least 2 hours, tossing occasionally. Garnish with fresh basil sprigs, if desired.
