Title: Fresh Mushroom Salad

1/4 | c | Canned no-salt-added chicken broth, undiluted |
1 | tb | Minced fresh parsley |
1 | tb | Minced fresh basil |
3 | tb | Lemon juice |
1 | ts | Olive oil |
1/2 | ts | Salt |
1/2 | ts | Ground cumin |
1/4 | ts | Freshly group pepper |
1 | Clove garlic, minced | |
1 1/2 | lb | Fresh mushrooms, quartered |
Fresh basil sprigs (opt) |
Combine first 9 ingredients in a large bowl. Add mushrooms; toss gently. Cover and chill at least 2 hours, tossing occasionally. Garnish with fresh basil sprigs, if desired.
