Title: Fish with Tomatoes

Yield: 4 Servings

1 Sole filets
1 Tomatoes
3 Cl Garlic
  Juice from 1/2 lemon
1/2tsWhite pepper
1/2tsThyme
1/2tsBasil
1/2tsRosemary
1/4tsCinnamon

Recipe by: Net Plunge tomatoes into boiling water for a few seconds, then remove, cool an peel. Chop them finely. Add the garlic (I slice mine but many prefer to mince it) and the spices. Pour 3/4 of this into a lightly oiled baking di top with the fish, sprinkle with the lemon juice and cover with the remain tomato mixture. Bake at 350F for 30 minutes, check the fish for flakiness and, if it's not done, bake it in 10 minute increments until it's nicely cooked through.
