Title: Mom's Borscht

3 Cans whole beets
1 Can Julienne Beets
2 Eggs
1lgFat-free Sour Cream
1cLemon juice
1cSugar or I used equal (24
  Packets =1 Cup)
  Onion

Put beets 1 can at a time juice and all in blender and blend, put in a large bowl add 2 eggs, 1 large sour cream, salt (a little), 1 cup lemon juice & 1 cup sugar (or sweetner). cut onion and scrape 5 or 6 times for some juice. mix all together with egg beater or wisk. Put in 1 can Julienne beets juice and all or if you can't find them use diced or grate them. Beat together and adjust seasonings, let it get cold & it gets thicker- (sometimes I add a little more sour cream or lemon juice or sugar as sometimes the beets are not as sweet or lemons as sour) I also sometimes put some ice cubes in the large bowl and stir to chill and remove them and taste a bit in a small cup, I put it in jars or such to chill. can be served with a dollop of sour cream if desired...enjoy!
