Title: Curry-Apricot Dip

1tsDiet margarine
1/4cMinced onion
1/2cDrained canned apricots
1 1/2tsCurry powder
1cDiet sour cream

Melt margarine in a skillet. Saute' onion in margarine until onion is transparent. Add apricots and curry powder. Cook 2 to 3 minutes, mashing apricots with a fork. Cool. Combine apricot mixture and sour cream in a bowl. Cover bowl and chill in refrigerator for at least one hour, to let the curry flavor develop. About 135 calories per serving.
