Title: Okra Cornmeal Pudding with Spicy Tomato Sauce

8 | oz | Small young okra |
1 1/2 | qt | Water |
1 | ts | Salt |
2 | c | Cornmeal |
2 | c | Sauce |
Butter flavoring (optional) |
Stem and cut the okra crosswise into 1/4" slices. Boil water, add salt and okra, cook on low heat (covered) 8 minutes. Remove cover, raise heat, and slowly stir in cornmeal. Lower heat and stir until mixture is very thick - about 6 minutes. Mixture should be smooth.
Off heat, add butter flavoring (if used). Pour into 1/12 quart pyrex-type dish (sprayed with butter spray, if desired). Spread out to fill dish. Let rest 2 minutes, invert onto serving plate. Serve with sauce on side.
