Title: Chicken in Lime

1 | lb | Skinless chicken breasts -- |

1 | c | Chopped onion |
1 | Garlic clove -- minced | |
1/2 | ts | Ground cumin |
1/2 | ts | Crushed coriander seed |
1/4 | ts | Tumeric |
1/8 | ts | Cayenne pepper |
2 | tb | Soy sauce, low sodium |
2 | Limes |
Trim all visible fat from chicken breasts. Heat a non-stick skillet over medium heat until hot. Away from the heat, coat with cooking spray. Add breasts, onion, and garlic. Saut=E9= until breasts are browned, about 8 minutes, turning once. Add seasonings and soy sauce. Reduce heat; cover; cook until chicken is fork tender and no longer pink, about 15-20 minutes. Cut one lime in quarters; halve the other. Place chicken on serving dish; top with the sauce from the pan; sprinkle with juice from the halved lime (about 2 Tbsps). Serve with the lime quarters.
