Title: Low-Fat Banana Muffins

2 1/2 | c | All-purpose flour |
2 | ts | Baking powder |
1 | ts | Baking soda |
1 | ts | Ground cinnamon |
1/2 | c | Unsweetened applesauce |
1 | c | Sugar |
3 | Egg whites | |
2 | c | Ripe bananas, mashed (3-4) |
1 | ts | Vanilla |
In a large bowl, combine flour, baking powder, soda and cinnamon. Combine remaining ingredients; stir into dry ingredients just until moistened. Coat muffin cups with nonstick spray or use paper liners; fill cups two-thirds full. Bake at 350 for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to wire rack. Yield: 15 muffins. One muffin equals 163 calories, 125 mg sodium, 0 cholesterol, 38 gm carbohydrate, 3 gm protein, trace fat.
