Title: Delmonico's Deviled Chicken

3 | lb | Chicken, in quarters/pieces |
1 | tb | Mustard,prepared |
1/2 | ts | Salt |
1 | c | Bread crumbs, freshly made |
1 | tb | Butter, softened |
1 | tb | Vinegar |
1/4 | ts | Cayenne, or to taste |
Prehead oven to 375f. Wipe the chicken with a paper towel. Mix the= butter, mustard, vinegar, salt and cayenne, and rub the mixture all over the skin side of the chicken.=14Place the chicken, skin side up, in a shallow= roasting pan. Sprinkle evenly with th crumbs and bake for about 40 minuts, or= until meat thermometer rgisters 170f in the breast meat, 185 in the dark meat.
