Title: Skewered Shrimp Packages

24 | lg | Raw shrimp (31 to 35 per lb) |
Shelled and deveined | ||
1/4 | c | Dry sherry or rice vinegar |
1 | tb | Minced fresh ginger |
24 | Green onions, cut to 6 | |

In a bowl, mix shrimp, sherry, and ginger. Cover and refrigerate for at least 1 hour or until next day. Meanwhile, in a wide frying pan, bring 1 inch of water to a boil. Add onions and boil, uncovered, until limp (15 to 30 seconds). Lift out and immerse in ice water until cool; drain. (At this point, you may cover and refrigerate until next day.) Thread a thin metal skewer lengthwise int each shrimp, piercing it almost-but not quite-all the way through. Lay an onion flat. Center a skewered shrimp across center of onion; tie onion around shrimp. (At this point, you may cover and refrigerate for up to 4 hours.) Lay skewered shrimp on a grill above a solid bed of hot coals. Cook, turning several times, until shrimp are opaque in center; cut to test (about 2 minutes).
