1/4cButter
3 Eggs
3/4cMilk
3/4cFlour;all purpose
2cWhipped cream;litely sweeten
BANANA TOPPING
3 Banana's; ripe
3tbLemon juice
2tsCinnamon
1pnNutmeg
  Banana brandy; to taste

Preheat oven to 425 degrees. Put butter in a large cast iron skillet and put skillet in hot oven. While butter is melting, beat eggs with mixer set on high for 1 minute. Whisk in milk alternately with flour, just until blended( may be slightly lumpy.) REmove the hot skillet from oven and pour batter onto melted butter. Bake 20 to 25 minutes or until brown and puffy. Dust with powder sugar and serve immediately with Banana topping(recipe follows) and lightly sweetenedwhipped cream(optional) Banana Topping: Chop bananas, add lemon juice, cinnamon and nutmeg. Blend in banana brandy to taste.
