6 | | Ounces uncooked egg noodles |
2 | ts | Vegetable oil |
1 | sm | Cucumber, chopped |
2 | | Green onions, thinly sliced |
1 1/2 | ts | Chopped fresh or |
1/2 | ts | Dried mint leaves |
1 | c | Plain yogurt |
1 | tb | All-purpose flour |
1/4 | ts | Salt |
1/2 | c | Broken walnuts |
Mint has a cool flavor that becomes stronger as it is crushed. In the. Cook
pasta as directed in recipe or on package; drain. Heat oil in 10-inch
skillet over medium heat. Cook cucumber, onions and mint in oil about 3
minutes; remove from heat. Mix yogurt, flour and salt. Stir into cucumber
mixture and heat just until hot (do not boil). Toss with hot pasta.
