1 | lb | Pasta, angel hair if Available |
2 | md | Carrots, scrubbed and Cut into matchstick size |
2 | md | Crookneck squash, cut Into matchstick size |
4 | | Scallions, chopped |
2 | tb | Olive oil |
2 | | Leeks, cleaned and sliced |
2 | tb | Calvert's cedar street Garlic mustard |
8 | oz | Ricotta cheese |
3/4 | c | Half-and-half |
| | Freshly grated parmesan che |
Ricotta and vegetable matchstick pasta. Heat olive oil and saute carrots
over medium heat for 5 minutes. Add squash and scallions and saute for 3
more minutes. Cook pasta until al dente. Drain and return to pot. Toss
with ricotta cheese, half-and-half mustard and sauteed vegetables. Heat
quickly to warm. Serve topped with freshly grated Parmesan.
